{Healthy} Muffins that Taste Like Donuts (Dairy-Free)

One thing I’ve realized with homeschooling this year is that I need to plan snack breaks. I hardly stop for lunch myself, so it’s easy to get busy with the schoolwork, housework, and blogging and forget that little people need to eat more often.

I’ve come to notice, however, that grouchiness or bickering can often be tied to hunger, and so offering morning and afternoon snacks can help our days run more smoothly (that afternoon snack is especially important for preventing whining while I’m trying to makes supper).

My go-to snacks are fresh fruits, but the girls also enjoy muffins for either breakfast or snack. One of their favourite types of muffin is a recipe that was a favourite of mine when I was a little girl: Muffins that Taste Like Donuts. I’ve changed the recipe a bit to make it healthier and usually make it in mini muffin cups for them, so it’s easy to grab for snacks.

{Healthy} Muffins that Taste Like Donuts

Ingredients:

3 cups flour

1/2 cup ground flax seeds

1 1/2 tsp baking powder

1 tsp salt

1 tsp nutmeg

1/2 tsp cinnamon

1/2 cup oil

1 cup honey (or 2 cups sugar)

2 eggs

1 1/2 cups milk (or soy or almond milk for dairy-free)

Directions:

Preheat oven to 350* F.

Combine oil, sugar, eggs and milk, and mix well.

Add dry ingredients.

Bake in mini muffin tins for 15-20 minutes, regular tins for 20-25 minutes. Add 5 minutes if using silicone baking pans. Muffins will be golden-brown on top and firm if tapped when they’re done.
